Freezer Breakfast Sandwiches - have these breakfast sandwiches ready in your freezer so all you have to do is pop them in the microwave and head out! 3 smart points each!

Breakfast sandwiches are my favorite breakfast food. They contain my favorite zero point food and that are eggs! I could eat eggs for breakfast, lunch, and dinner but I try to limit the number of eggs eaten per day.

A lot of people think eggs are high in cholesterol but lately, eggs have been back in the news again and the media is all over the place with them. Make up your minds! I have always been told that eggs have good cholesterol in them, they contain protein, and help keep me full!

Please note, I recently updated this recipe so it's more easier to make using a sheet pan method for cooking eggs. It's pretty much still the same ingredients as it was before, just different directions!

Why You Will Love This Recipe

Cooking eggs separately in a skillet is kind of a pain. That's why I love cooking eggs in a sheet pan to save time and well it's just fast!

You can cook the eggs in a skillet if you like but sheet pan eggs are where it's at!

Instead of Candian Bacon, you can use sliced ham or breakfast sausage. Turkey sausage would help keep the points lower. It's really easy to change up the type of protein used in the sandwich.

Ingredients for Breakfast Sandwiches

  • English Muffins- I used a light English muffin and the brand I use is Country Hearth. I believe they are a Midwest only brand. Scan the English muffins in your store to check for points! You might have to adjust the points in your recipe builder if you can not find a Lighter English muffin.
  • Large Eggs - Eggs are zero points on WW Purple and Blue plan. There are many different methods of cooking eggs but I always make mine in a nonstick skillet. I crack the egg in a bowl and whisk it with a fork until it's well combined. I add that to my nonstick pan and let it surround the entire pan. When the egg is cooked I fold it together using a spatula. Kind of like making an omelet
  • American Cheese slices - Velveeta original cheese slices are 1 point
  • 1 slice of Canadian bacon - The Canadian Bacon and cheese don't have to be cooked since the sandwich gets warmed up in the microwave. Canadian bacon is very thin depending on how some brands cut it and 1 slice is 0 points. The more you put on there it will have points. If you don't like Canadian bacon use turkey sausage or regular bacon. There are so many ways to make this!

How to make Breakfast Sandwiches

Step 1: Preheat your oven to 350°F. Line a large sheet pan with parchment paper and lightly coat with cooking spray.

Step 2: In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

Step 3: Pour the mixture onto the prepared sheet pan, making sure it is evenly distributed.

Step 4: Bake the sheet pan in the preheated oven for 15-20 minutes, or until the eggs are set and slightly golden on top. Remove from the oven and let cool for a few minutes. Cut the sheet pan eggs into squares and serve immediately.

Recipe Tip: You can season the eggs before or after cooking.

Step 5: Spread out the English Muffins on another sheet pan and top it with an egg slice, cheese, and bacon.

Wrap in parchment paper or tinfoil to freeze for later or serve immediately.

  • ¼ tsp black pepper
  • 6 English Muffins
  • 6 Slices of American Cheese
  • 6 Slices of Canadian Bacon or Sliced Ham

*If you have a beef against Fat-Free cheese then use something else. I do not use this all the time but I chose this because it helped make the sandwich be the lowest point possible. Feel free to use another type of cheese and adjust the points. I tend to enjoy the slices that are higher in points. DO YOU.
