A few that things that happened:

‌• We became profitable! While the numbers are still small, we officially started turning a profit a few months ago!

This year also marked the first time I’ve ever attempted to make a macaron from scratch and it didn’t turn into the disaster I was expecting!!! Hooray!!

Jess loves sprinkles and these macarons were bursting at the seams with them so needless to say, they had to be made to celebrate our birthday! I followed this recipe from Sweet And Savory By Shinee and they turned out perfectly!

All in all, this has been an exciting year for Cooking With Janica. We look forward to creating some amazing and delicious recipes for you all in 2017! Stay tuned!

Ingredients

Macaron Shells:

  • 1 cup almond flour
  • ¾ cup powdered sugar
  • 2 large egg whites
  • ¼ teaspoon cream of tartar
  • ¼ cup granulated sugar
  • ½ teaspoon pure vanilla extract
  • 2-3 tablespoons sprinkles

Funfetti White Chocolate Butter Cream:

  • 5 tablespoons unsalted butter (softened)
  • 1/3 cup powdered sugar
  • ½ cup white chocolate chips
  • 1 teaspoon pure vanilla extract
  • 1-2 teaspoons sprinkles

Instructions

  • In a bowl, sift together almond flour and powdered sugar (the almond flour I bought was super-fine so I only sifted once. If your almond flour is not of the super fine variety, sift twice). Set aside.

  • In a standing mixer with the whisk attachment or a hand mixer, beat the egg whites on medium until foamy. Add cream of tartar and continue to mix.

  • Slowly add sugar, one tablespoon at a time, increase speed to medium-high and beat until hard peaks form. Then mix in vanilla extract completely.

  • Setting the whisk aside, pour flour and sugar mixture over the egg mixture and gently mix the two together with a spatula. It's best to mix by running the spatula clockwise around and then through the middle of the batter over and over again.

  • Mix until the batter has become thin and lava like (You do not want to over mix the batter. This will lead to cracked macaron shells. The batter is ready when you drop a sample of it and the ribbons of the drop dissolve within 10 seconds. This may take a couple attempts).

  • Once the batter has been mixed enough, add in sprinkles (The more you add at one time the greater chance of the sprinkles bleeding which doesn't have to be a bad thing. Bleeding sprinkles can actually make the macarons look pretty fun. But again, try not to mix the batter any more than you need to at this point).

  • On a baking sheet lined with parchment paper or on this macaron silicone mat , pipe the macaron batter from a piping bag or gun into 1.5 inch circles.

  • Tap the baking sheet on the table a couple times to cause any air bubbles in the batter to be released (Any air bubbles will also cause the shells to crack).

  • Top the shells with more sprinkles.

  • Pre-heat the oven to 300 degrees while you let the macarons sit for 15-30mins. You want the shells to harden up. After 30min if you touch the shell and it doesn't stick to your finger, it's ready to bake.

  • Bake the shells for 18-20min. Cool on a wire rack and then remove from parchment paper or silicone mat.

  • While the shells are cooling, make the funfetti white chocolate buttercream. In a bowl whisk together the butter and powdered sugar until fluffy.

  • Melt the white chocolate in the microwave and add to the butter and powdered sugar mix along with the vanilla extract. Mix thoroughly.

  • Once complete add in sprinkles and stir with a wooden spoon or spatula.

  • With a piping bag or gun, pipe icing onto half the shells and top with the other half of the shells.

  • Celebrate by eating one or two....or more....

FAQs

Do you put sprinkles on macarons before or after baking? ›

Once you have used your scribe to pop the bubbles, this is when you will add in your food safe sprinkles to the top BEFORE the drying step. The sprinkles need to cling to a moistened surface, which is why we add them before our macs are dry.

What is the secret to good macarons? ›

The key to a good macaron is a good meringue, with smooth, shiny, stiff peaks. You can tell it's done when you can flip the bowl upside down and nothing comes out. The peak will be stiff yet still droop slightly. Start with aged or fresh egg whites and whip them on medium for a few minutes until bubbles form.

Can you make macarons the day before? ›

Can macarons be made ahead of time? Yes, macarons can be made ahead of time and stored in an airtight container until ready to serve. However, it's important to note that the texture may change slightly after a day or two.

How to make sprinkles stick to macarons? ›

When to add sprinkles to your macarons: After you've piped your batter on your baking sheet, and popped all the air bubbles, add a few sprinkles. Tip: Don't wait too long after piping the batter as the batter tends to dry out. You want the sprinkles to stick to the batter while it's still wet!

How to add sprinkles on top of macarons? ›

Bang the pans firmly on the counter a few times to release air bubbles, then pop any remaining air bubbles that come to the surface with a toothpick. Sprinkle nonpareil sprinkles over the piped macarons while they're still wet. Let the macarons rest for 30 minutes, or until they develop a skin.

What is the hardest part about making macarons? ›

Hollow shells: One of the most frustrating problems is when the macaron shells turn out hollow. This is usually caused by overmixing the batter, which can cause too much air to be incorporated into the mixture. To avoid this, be sure to fold the batter gently and stop as soon as it reaches the desired consistency.

How long should macarons dry before baking? ›

Dry The Shells

There's one more crucial step before you bake the shells. Let the piped circles sit out until they are dry and no longer tacky on top, usually 30-60 minutes. This time allows the top to firm up and form a skin, which helps the macarons rise UP and form their trademark ruffly “feet.”

Why are macarons so difficult to make? ›

The base of macarons is made from whipped egg whites, which you then fold a mixture of powdered sugar and almond flour into. This batter tends to be unstable and unpredictable, which can be pretty disheartening to even professionally trained bakers.

What are the three types of macarons? ›

There are basically three methods you can use to make macarons: French, Italian, and Swiss.

Why are macarons so expensive? ›

Macaron Ingredients Are Expensive

Unlike most bakery treats, macarons are not made with all-purpose wheat flour, which even a home cook can pick up at the supermarket for less than 50 cents a pound. Instead, they're made with almond flour, which costs more than nine times as much—and that's at Costco.

Can you let macaron batter sit before piping? ›

This is a big myth! I've even heard people saying to not let the batter sit for an hour in the piping bag. This is far from the truth! You can absolutely let the batter sit for hours in the piping bag.

Do you use old or new eggs for macarons? ›

Aged egg whites are ones which have been separated and left in the refrigerator for a minimum of 24 hours so that the proteins inside can relax, making it easier to whip to volume. It's very important to use aged egg whites for baking macarons because a lot of problems derive from a poorly prepared meringue.

Can I add sprinkles after baking? ›

After baking you need icing or a glaze before adding sprinkles or they won't stick. Enjoy! If the cookies are going to be frosted you put them on after they're baked & frosted. If you're don't plan on frosting them you can apply small Nonpareils or colored sugar crystals before you bake them.

Will sprinkles melt in the oven? ›

You can also try adding sprinkles to your cookies before baking, but depending on the recipe, they may melt in the oven. Try it out with one cookie before committing to an entire batch.

Do you put sprinkles on before cooking? ›

You have to put the sprinkles on before baking cookies, so they will stick, unless you're going to frost them, in which case the sprinkles go after the frosting.
